  • Pampanga chefs Dennis Lim and Judy Uson serve up the unexpected with new Rockwellist confection flavors

Tibuk-Tibuk, Pastillas, and Shing-a-ling with chocolate? In a bar? Trust the adventurous Kapampangans to come up with culinary surprises.

As the Rockwell community at Nepo Center begins to make its mark in the region, the brand introduces the Pampanga Series Confections. Esteemed Pampanga-based chefs Dennis Lim of the famed Denlim’s Kitchen and Judy Uson of the go-to homegrown restaurant Cafe Noelle have collaborated with Christian Valdes of CMV Txokolat to bring Rockwellists a taste of the culinary capital’s distinct flavors.

Lim and Uson combine the flavors of food items that are popular in Pampanga with CMV’s luscious chocolate, resulting in a harmonious blend that is both comforting and delightful. Every chocolate bar is a curious, sensational, and exquisite concoction.

There’s the accessible snack Shing-a-ling and the ubiquitous Kasoy melded with chocolate. It’s all at once tangy, crunchy, rich, and nutty. This unique combination provides a textural contrast that will keep you coming back for more, like a bag of chips.

Next on the list is the Pastillas de Calamansi, a refreshing rendition of the classic pastillas. The zesty notes of calamansi are skillfully balanced with the creamy sweetness of pastillas, creating a treat that captures the essence of tropical indulgence.

For those who crave a nostalgic taste of childhood, the Champorado Bar is a must-try. Dennis Lim takes the familiar champorado, and transforms it into a chocolate bar. With its rich chocolate flavor and subtle hints of rice, this creation is a thrilling homage to a breakfast staple.

To round out this extraordinary collection, Judy Uson’s Tibuk-Tibuk takes center stage once again. Its velvety texture and exquisite taste perfectly complements the bold flavors that define the The Rockwellist Confections’ Pampanga Series.

Soon, the L.A. Cheesebread bar will be making its way to your taste buds. Inspired by the popular baked goodie in Pampanga, it fuses the buttery goodness of cheese bread with the indulgent sweetness of a chocolate bar. It promises to be a craving like no other.

Each confection in this collection tells a story, celebrating the rich flavors and traditions of the Philippines, while pushing the boundaries of taste and texture. These likewise offer Rockwellists an opportunity to savor a taste of the Kapampangans’ diverse palate as the brand grows its presence here.

Through Rockwell at Nepo Center, the real estate developer has partnered with the Nepomuceno family to create a mixed-use community that will be replete with residential and retail offerings, including the first Power Plant Mall outside of Makati. Currently, there are two residential towers—The Manansala and The BenCab—that are on offer within this bustling development in Angeles City.

Whether you’re a dessert connoisseur or simply looking for a delightful treat to satisfy your sweet tooth, The Rockwellist Confections Pampanga Series pays homage to the region’s rich culture and promises a journey of flavors that will captivate your senses and leave you wanting more. Get them today at shop.TheRockwellist.com, or visit their pop-up at the R1 Level of Power Plant Mall.

  • Toyo Eatery’s summer pop-up, Orosa, is now in Rockwell

Rockwell Center’s The Balmori Suites introduces Orosa, a pop-up dining concept created by the chefs of Toyo Eatery, the celebrated modern Filipino restaurant which has been recently hailed as one of Asia’s top 50 restaurants. The Balmori Suites’ Chef’s Table concept highlights renowned chefs in the country, through month-long pop-ups, providing a delightfully unique experience to the Rockwell community.

Toyo Eatery, a homegrown Filipino restaurant in Manila headed by Chef Jordy Navarra, seeks to discover the national identity through playful interpretations of local cuisine. It gets its name from the Filipino word for soy sauce, a familiar condiment with deep complexities. A meal in Toyo navigates diners across various layers of flavors and ingredients, using simple flavors and cooking techniques that are both traditional and modern.

For their summer pop-up in Balmori, Toyo Eatery drew inspiration from the legacy of Maria Orosa – scientist, activist, humanitarian, and war hero who dedicated her life to uplifting the Philippines through food innovation. (Of her various creations, the most famous one, of which she does not receive enough credit for, is banana catsup). Toyo Eatery’s summer pop-up will feature casual dishes and quick bites in solo and family style portions, together with timeless Filipino favorites, including Orosa’s contribution to food technology.

The creativity and thoughtfulness seen in the overall dining experience has earned Toyo consistent critical acclaim. Get a taste of Toyo at The Balmori Suites, from April 19 to May 14, 2023. Catch them from 11:30AM to 9PM, every Wednesday to Sunday. No reservations required, check their Instagram page to learn more.
