Restaurant Idalia Brings an Exclusive Menu to Balmori Chef’s Table

A neighborhood staple in Salcedo, Restaurant Idalia has earned a loyal following for its ever-evolving menu inspired by the seasons. From July 10 to 31, 2026, Chef Kevin David, who honed his craft under a Michelin-starred chef in the U.S., will take over Balmori Chef’s Table with a playful menu of generous, hearty dishes designed to bring people together.

One-Time-Only Balmori Creations

While the flagship Salcedo location has its own rhythm, Idalia’s residency in Balmori introduces an exclusive menu created entirely for this pop-up.

Start with one of Idalia’s signature favorites: the sourdough focaccia, baked with a crisp, golden crust and a light, airy crumb. Served alongside the restaurant’s silky house hummus, it’s a pairing perfect to begin the meal.

For the pasta course, don’t miss the handmade vongole. Tossed with fermented chili, pangrattato, and fragrant garlic confit, it delivers layers of savory flavor with just the right amount of heat.

Made for sharing, the Iberico Pork is one of Idalia’s signature entrées. Served with wood-fired roasted cabbage, a rich plum glaze, and velvety fermented cauliflower purée, it’s a hearty plate that brings the kitchen’s open-fire cooking to the forefront.

To end on a sweet note, Idalia serves desserts that showcase local Filipino ingredients, just like the ube panna cotta with jackfruit and coconut. Guests can also complement their meal with a wide selection of artisanal cocktails and drinks. A dedicated kids’ menu is also available throughout the Balmori residency, making the experience just as enjoyable for younger diners.

For a limited time, Restaurant Idalia brings an exclusive must-try menu to Rockwell. Reserve your table, bring your favorite people, and enjoy hearty plates only at Balmori Chef’s Table.
