The pop-up marks Taupe Dining’s second appearance in The Balmori Suites, inviting guests to experience its signature balance of refinement and play—this time through a festive à la carte format designed for gathering, indulgence, and discovery.

    Since opening its flagship in BGC, Taupe Dining has become known as a stage for self-expression—where monochrome walls fade into the background and food takes center stage. Chef Francis brings this same creative philosophy to The Balmori Suites: bold yet precise, sophisticated yet spontaneous. Every plate is a reflection of his belief that fine dining should move beyond formality while remaining deeply rooted in flavor and story.

    Throughout the holiday season, Taupe Dining will host a series of limited-time experiences that celebrate connection and craftsmanship.   • Deli by Chele Goes All-Day Dining at Balmori

    Deli by Chele has always been about play. What began at Stvdio Lab — where sauces, preserves, cheeses, kombucha, and breads were crafted with the same care you’d expect from a dish from Gallery by Chele, quickly grew into an online deli with over 70 products. City counters soon followed, serving fresh sandwiches daily. Each one carries Chef Chele González’s Spanish touch and Chef Carlos Villaflor’s Filipino flair, held to the same meticulous standards of fine dining, but delivered in a more casual setting.

    This October 4 to 18, 2025, that story continues at The Balmori Suites Chef’s Table. Chele and Carlos are bringing the cool, casual vibe of New York—with a Filipino twist—through Deli by Chele’s first all-Day dining pop-up. Think hearty pastrami, fluffy pancakes, and more. Whether you’re looking for a leisurely breakfast, a late lunch, or dinner with friends, it’s a menu designed to fit any time of day.

    The big question is: what delights will this special menu bring?

    Unlike the current Deli by Chele branches around the metro, this pop-up isn’t just about quick bites or takeaways; it’s a menu meant to be lingered over. “The All Day Dining Pop-Up is our way of showing how Deli by Chele continues to evolve,” says Chef Chele González. “We wanted to create a menu that’s fun, social, and approachable, any time of the day, while still carrying our signature Deli craftsmanship.”

    The menu opens with playful starters like Coconut Tempura Prawns and Smoked Salmon Puffs, before easing into all-day breakfast favorites such as Soufflé Pancakes and French Toast. At the center are the sandwiches—a showcase of the brand’s signature pastrami with classics like the New York–style Brisket Pastrami and Reuben, now joined by fresh newcomers like the Duck Pastrami Sandwich and Mortadella Toast. And because no meal is complete without something sweet, desserts like the Bibingka Cheesecake and a bright, zesty Calamansi Pie make the perfect finish.

  • Khaiba Debuts at Balmori: Chefs Nouel Catis & Sonny Mariano Blend Filipino-Middle Eastern Flavors

    At first glance, Filipino and Middle Eastern cuisines may seem worlds apart, but look a little closer, and both share a love for bold flavors, warm hospitality, and food that tells a story.

    From June 12 to July 13, 2025, Khaiba comes to The Balmori Suites Chef’s Table as an exclusive pop-up exploring this unexpected harmony. The name comes from the Arabic word for shock, echoing the Filipino kakaiba—something different.

    Helmed by Chef Nouel Catis, the pastry talent behind the original Dubai Chocolate, and Chef Sonny Mariano, the award-winning culinary force behind Tasteless Food Group favorites, the collaboration explores the creative tension (and harmony) between Filipino soul food and Middle Eastern depth.

    The result? A bold, thoughtful menu that doesn’t follow the rules while honoring its roots. A truly kakaiba experience.

    Story Behind Khaiba

    Khaiba was born over dinner in Dubai, when Chefs Sonny Mariano and Nouel Catis met with Tasteless Food Group founder Charles Paw. One question sparked it all: What if Filipino flavors met Middle Eastern spice?

    For Chef Nouel, it’s a homecoming. After 16 years in acclaimed kitchens like Burj Al Arab, Sofitel Fiji, and Westin Beijing, he returns with a signature blend of Gulf techniques and Filipino soul.

    On the savory side, Chef Sonny, known for reimagining Filipino fare in Scout’s Honor and Seafood and Oyster Bar, brings heirloom ingredients, coconut milk, and bold umami into dialogue with Middle Eastern spices and methods.

    The Menu: Nostalgia Meets Nakakaiba

    Chef Sonny leads the savory menu, blending Filipino comfort with Middle Eastern influences. Expect at least two inventive plant-based dishes, alongside bold cocktails infused with labuyo, tamarind, ginger, and regional herbs for the perfect pairing.

    Highlights:

    • Tagine-Style Lamb Leg Kaldereta: Northern-style stew made with coconut milk, figs, apricots, and almonds; slow-cooked to tenderness.
    • Ensalada: Smoked eggplant carpaccio reinvented with smoked papaya (à la tinapa), beer-fermented burong mangga, cashew cheese, and fried chickpeas.

    Chef Nouel’s desserts reflect his years in Dubai while staying rooted in Filipino comfort and nostalgia.

    • Habibi Cake: A pistachio-filled reimagination of his iconic Dubai Chocolate: layers of rich tsokolate cake, Davao chocolate frosting, pistachio diplomat cream, and pistachio-kunafa crunch. Served with Nutella sauce. (Available as a 4-inch cake only.)
    • Halo 2x: Soft-centered ube cheesecake topped with heirloom pinipig, delicate phyllo, and finished with evaporada pandan milk sauce, bridging baklava and barrio flavors in every bite.
