
Following the success of his rehome restaurant and previous Balmori pop-up, The Test Kitchen and Anvil, Chef Josh Boutwood returns with Osteria, a 24-day dining experience from September 5 to 28, 2025 where he personalizes Italian cuisine with his own inventive approach.
His vision is to interpret the art of Italian cooking with bold creativity and soulful simplicity. Inspired by Italy’s humble osterias—intimate spaces where food and conversation flow in harmony—Boutwood’s newest concept brings warmth to the table, where flavors flow as freely as the wine.

Known for his philosophy of letting ingredients speak for themselves, Boutwood avoids unnecessary complication, instead applying his signature techniques to draw out their fullest expression. Drawing from the country’s lively ingredients: crisp, bright, acidic, and aromatic, Osteria presents handmade pastas, herbaceous sauces, velvety creams, butters, and cheeses, and house-cured meats– all crafted to harmonize with one another through his inventive touch. As Boutwood explains, the flavors are meant to feel “alive, bright, and expressive, without taking away from each ingredient.”
With Osteria, Chef Josh invites guests to experience the warmth of Italian dining through his modern lens, where quality ingredients, tradition, and intention come together. Open from Sunday to Thursday, 11AM to 9PM, and Friday to Saturday, 11AM to 10PM, Osteria welcomes diners at The Balmori Suites Chef’s Table.
